Start by placing the ground beef in a mixing bowl. Season generously with salt and pepper. Use your hands to gently mix the seasoning into the meat. Be careful not to overwork the meat to maintain tender patties.
Divide the meat into four equal portions and shape each portion into a round patty, slightly larger than your buns, as they will shrink during cooking. Press a small indentation in the center of each patty to help them cook evenly.
Heat a skillet over medium heat and lay the bacon slices flat. Cook until they are crispy, turning occasionally, about 5-7 minutes. Transfer the cooked bacon to a plate lined with paper towels to drain excess grease.
In the same skillet (or a preheated grill), increase the heat to medium-high. Place the patties in the skillet or on the grill. Cook for about 3-4 minutes on one side without moving them, allowing a nice crust to form.
Flip the patties and cook for another 3-4 minutes for medium doneness. Adjust the time if you prefer your burgers more or less done. During the last minute of cooking, top each patty with 1 oz of blue cheese to let it melt slightly.
Ensure the onion jam is at room temperature for easy spreading. If needed, you can briefly warm it in the microwave or let it sit out while prepping other ingredients.
Lightly toast the burger buns in the skillet or on the grill for a minute or two to give them a slight crunch.
Start with the bottom bun, place a beef patty with melted blue cheese on top. Add a slice of crispy bacon, then spread a generous amount of onion jam over the bacon.
Finish with the top bun, gently pressing down to hold everything together.
Serve the burgers immediately while they're hot. Consider pairing with a side of fries or a fresh salad to complement the rich flavors.
